Crockpot Chicken Soup for the Congested


This year has not been kind to my sinuses. It’s only July, and I’ve already had two sinus infections this year, which is a new thing for me. I’m hoping it’s just a fluke. Anyway, I made up some chicken soup the other day that turned out great, if I do say so myself. I mean, I can barely taste anything and I thought it was good, so it must be flavorful, right?

Super Easy Crockpot Chicken Soup

3-4 chicken breasts (I actually used 3 chicken breasts and 1 leg)

3 cups wide egg noodles

3-4 carrots, chopped

1/2 cabbage, chopped (or 3 stalks celery — I didn’t have any so I tried cabbage)

1 small yellow onion, diced

6 cups water or chicken broth

2 bay leaves

Salt and pepper

Garlic powder

Add all ingredients but the noodles to the crockpot, mix well. Season with salt, pepper, and garlic to taste (if you used chicken broth you might need more salt). Cook on High for 4 hours, or Low for 6-8 hours, depending on how fast your crockpot cooks. During the last 20 minutes of cooking, add the noodles.

And there you have it — a very easy recipe that will comfort you while you watch Netflix and lament the fact that every time things are going right for Lorelai, here comes Christopher. I clearly don’t get invested in TV shows. Totally too cool for that.
