I’ve been thinking about beets a lot lately. I know, I live an exciting life. Well, I did pledge to expand my vegetable horizons this year.

“Killer Tofu” was a classic.
Ben absolutely hates them, so I see it as a challenge. I brought him onto the Brussels sprouts train, but this is proving to be more challenging. This Huffington Post article has some promising-looking recipes. A tart can’t possibly be bad, right? There’s even a sorbet, which, of course, reminds me of the ice cream maker on “Chopped.” WHY DO THEY ALWAYS GO FOR THE ICE CREAM MAKER?
Beets also are pretty healthy for you, too — did you know they are (allegedly) nature’s Viagara? The more you know!
How about you guys? Do you like beets?
I do enjoy beets. I like them shredded in salad, and in borscht. MMmmmmm….borscht. OH!! And if you have a juicer, you can make a pretty rad carrot-beet-with a splash of orange-juice.

Borscht! It makes you strong like bull! I’m having some in a salad today. I’m working up to trying it in a smoothie or juice.

It’s really gross by it’s own, so use like an apple juice base. I love it in carrot. Like 3 parts carrot one part beet, a splash of orange. Really good stuff.
