I’ve been thinking about beets a lot lately. I know, I live an exciting life. Well, I did pledge to expand my vegetable horizons this year.
Ben absolutely hates them, so I see it as a challenge. I brought him onto the Brussels sprouts train, but this is proving to be more challenging. This Huffington Post article has some promising-looking recipes. A tart can’t possibly be bad, right? There’s even a sorbet, which, of course, reminds me of the ice cream maker on “Chopped.” WHY DO THEY ALWAYS GO FOR THE ICE CREAM MAKER?
Beets also are pretty healthy for you, too — did you know they are (allegedly) nature’s Viagara? The more you know!
